The hills of Casatico in Emilia lend a perfect environment and growing region for Lambrusco Maestri grapes as well as Barbera, Bonarda, Sauvignon, and Malvasia. Langhirano is the commune (municipality) in the Province of Parma in the region Emilia-Romagna, 90 km west of Bologna and about 20 km south of Parma. Cassatico vineyards are exposed west. Altitude is between 220 & 240 above sea level. All the wine is made in atmosphere modified with liquid nitrogen. This makes it possible to vinify without adding any of the chemical substances normally used in wine-making processes. A true and high respect for the land and grapes as a gift of nature to create a wine intact and in tune with these forces. There are no chemical used in the vineyard and a single fermentation process with the natural yeasts from the vineyard, no additions of yeast or sugar are added in the fermentation process. The wines ferment in pressurized Stainless-steel tanks, this is also known as Charmat Method.
