In September of the outstanding 2015 vintage, Pierre Caiergues created a wine merchant workshop in his birth town of Carcassonne.  Here in the heart of the Languedoc region, he tailor-makes fine wines from the Mediterranean Basin area of Southern France.  Convinced of the immense potential this region has to offer, wine-trotting native Pierre Caizergues conceives, selects, assembles and ages each of his blends in a way which both reveals and enhances the terroirs of the Midi.  The art of blending different cuvées that have been vinified separately, either according to their variety or their vineyard plot, requires real expertise.  The key is to look to the future and anticipate what the years might bring, all the while respecting the particular characteristics of each vintage, the grape varieties, the local appellation and the terroir.  Pierre’s signature is a guarantee to this.  Pierre chooses local, Cité de Carcassonne grape varieties for his wines, and favors short maturation without the use of oak.  These young wines are instead aged in concrete or stainless steel.
